If you know anything about the late Bob Evans, it’s that he famously turned a small truck stop in Ohio into a nationwide restaurant and catering empire with his homemade sausages. He didn’t do that with magic. But he had a heck of a recipe for sausage patties and links.
When Bob Evans first started his sausage business more than a half-century ago, most Americans fed on a cheap variety of sausages made from throwaway scraps. That wasn’t good enough for Mr. Evans. He wanted to craft a special product for the hungry truckers he fed daily at his 12-stool diner in Gallipolis, Ohio. So he began producing his own delicious sausages using the finest parts of the hogs he raised on his farm. Of course, when you use the best ingredients, you make some tasty sausages.
The sausages were masterpieces—juicy and porky and flavorful. And his truckers, freed from poor-quality sausages, began spreading the word as they traveled across the region. Crowds poured into his diner in torrents. That was the start of his business. Since 1953, when he formed Bob Evans Farms, his restaurant chain has stubbornly stuck to good, old-fashioned, home-style meals.
