Fried Chicken with Local Roots at Denver’s Birdcall Catering

When the chain Birdcall opened restaurant locations across Denver, it snared the attention of the local community. Alongside the top-notch fried chicken sandwich it served was a focus on creating deep local roots. The restaurant chain and catering operation showcased excellent, locally procured ingredients and made its dishes more affordable and accessible to all, benefiting the community.
“We want to have our money go back into the customer,” explains Birdcall‘s marketing project manager Adam Akisanya. “We’re always thinking about how we can better serve them.”
That same ethos motivates Birdcall’s catering program, where they are constantly striving to provide their customers with a superior product than fast food chains can offer.
“As people get busier and they’re more pressed for time, we want to provide quality food at a lower price,” he explains. “But above all, it’s that personal touch. “If there’s something wrong with your food, you can call us directly to our home office, or you can actually contact the manager and not get put on hold or anything like that.”
There’s a world of hospitality contained in the food, too. Catering customers can choose from Birdcall‘s roster of antibiotic-free chicken sandwiches and strips. The crispy chicken sandwiches are topped simply with sweet butter pickles or loaded with ingredients like bacon and pepper jack cheese. Also on the menu are refreshing salads. Check out the baby kale salad filled with summer and fall veggies, chewy farro grains, and delicious garlic-herb vinaigrette.
It might come as a surprise, however, that Adam Akisanya’s favorite menu item is the vegan sandwich composed of crispy tofu with slaw and Sriracha aioli.
“It has amazing flavor,” he says. “I think we’ve come so far from our vegetarian options.

As an added bonus, the people behind Birdcall take pride in their relationship with local vendors who supply most of the restaurant’s ingredients. Their chicken, in particular, comes from family farms. Buns are made fresh at Aspen Baking Company, and their spices come from Denver’s own The Spice Guy. Even their furniture comes from a local designer.
And it doesn’t stop at the food. “Being in Denver, everybody is collaborative,” Adam Akisanya says. “Everybody’s willing to collaborate.”
Birdcall composts and recycles to minimize their carbon footprint, partners with various local charities, and also plans an event every year that benefits a different non-profit organization.
“Colorado and Denver are very collaborative and vendors and local producers are willing to work with you if you just reach out,” Akisanya says. “That’s where we’re going to take it in the future.”
